I try to make lunch in the morning at least 3 times a week ( Friday is chips day in our canteen, so by default I don’t make an effort to cook something) , but for the remaining days, I get up in the morning and I cook a balanced breakfast and / or lunch, depending on time and ingredients.
The reason for this is,
– Is that since I am a vegetarian, there are not always enough options in our canteen ( I know, it’s hard to believe, but a cheese sandwich I don’t count as a veggie option)
– Also as a vegetarian, you need to make sure that you get enough vitamins and minerals in your system, this way you don’t have to worry about that after lunch, and you don’t have t feel guilty if you have an easy dinner at night 🙂
– Life is expensive enough as it is, so I won’d want to overpay for something I don’t really wanted in the first place.
for these reasons I choose to get up a bit earlier and cook a lunch containing at least 4 different veggies in the morning. I know it’s a bit of work, but with everything; once it is in your system and it has become a habit, it’s not that pesky.
In the last months, a colleague of mine gave me some praise for whatever was in my container and that he felt slightly envious, to which I jokely replied: for a small fee I can make it for you too… and so it happened that once a week I cook 2 containers.
From now on, I would like to share a few of these recipes with you, which you may adapt in your system.
